Smile crumb muffins (bread crumb muffins)

    crumb muffins (bread crumb muffins)

    Recipe Description
This is not a sweet muffin. When we want it sweet we spread syrup butter, honey butter, or fruit butter on it.
    Preparation Steps:
    Preheat oven to 375
grease muffin tin or line with baking paper cups
    Level of Difficulty:
    Easy
    Time Needed:Ingredients:
    1 large egg, slightly beaten
    1 c milk
    1/4 melted butter
1 c bread crumbs ( I use whole wheat bread crumbs)
    1c flour
    1T sugar
    1T baking powder
Original recipe also called for 1/2 salt but I omit it
    Serves:
    1 dozen
    Directions:
Combine the egg, milk, butter and bread crumbs. Stir and set aside

Sift together flour, sugar, baking powder, and the salt if you wish
Fold into liquid ingredients. Stir just until moistened.

Fill grease or lined muffin tin 2/3 full bake 25 minutes

    Is this the TWG recipe?

eta: oops, I think I was confusing this with the bread crumb cookie recipe from TWG

I buy seasoned bread crumbs, so I'm having trouble imagining this one LOL

I make my bread crumbs by saving the heals of bread (since none will eat them here) When I have enough I run them through the food processor and Viola Bread crumbs

This recipe was originally from More with Less cookbook

That does sound good. I'll definitely have to try it sometime soon...I have a lot of crusts in a bag in my freezer.

Thanks for the recipe!!! I make the Bread-Crumb Cookies from the Tightwad Gazette so this will be something to add to the "bread-crumb" recipe file.
