Cinnamon-topped muffins ( whole wheat oatmeal muffins)


Recipe Description
An oatmeal muffin (I use whole wheat flour but white flour can be used)
Preparation Steps:
Pre heat oven to 425

grease muffin tin

For Muffin batter:
1 cup flour( I use whole wheat but white flour can be used)
1/4 c sugar
3 t baking powder
1 c old fashioned oats (you can use quick cooking oats too)
3T oil
1 egg
1 c milk

Topping (sugar crunch)
2T sugar
2t flour
1t cinnamon
1t melted butter
Serves:
12 muffins
Directions:
Sift together the flour, baking soda, sugar.
Stir in oatmeal
Add oil, egg, milk
Stir until moist Fill greased muffin tin 2/3 full

For topping: mix together sugar (2T) flour (2t) cinnamon and melted butter Sprinkle mixture on top of muffin batter and bake 15 min.

Variations:
Not crunchy cinnamon topping ( this one sinks in to the batter a bit and makes a "surprise" in the muffin)
To make this one change topping ingredients to 2T sugar 1T flour 1t cinnamon 1t melted butter it will be a thick liquid spoon on top of muffin batter and mix

Another variation: bake in things like raisins, cranraisins . Blueberries are suppose to work but I haven't tried that one yet.
add 1/2 cup when you stir in the oatmeal.
