    Default Chocolate Zucchini Bread

    Chocolate Zucchini Bread


    Recipe Description
    Moist and delicious!! You'd never guess it has anything in it that is good for you!
    Preparation Steps:
    Shred zucchini and pat dry with paper towels

    Preheat oven to 350F

    Grease a 9x5" loaf pan or muffin tin
    Level of Difficulty:
    Easy
    Time Needed:
    Approx 1 hour (plus cooling time)
    Ingredients:
    1 1/2 c shredded zucchini
    2/3 c sugar
    1/4 c milk
    1 egg
    2 T honey
    2 T oil
    1 t vanilla
    1 t ground cinnamon
    1/2 t ground cloves
    1 1/3 c flour
    3/4 t baking powder
    1/2 t baking soda
    1/8 t salt
    1/2 c unsweetened cocoa (dark if available)
    1/2 c mini choc chips
    Serves:
    1 loaf = 16 slices
    Directions:
    In a bowl, combine sugar, milk, egg, oil, honey, vanilla, cinnamon, and cloves.

    In a large bowl, whisk together flour, baking powder, baking soda, salt, and cocoa.

    Add zucchini, milk mixture, and choc chips to flour. Stir JUST UNTIL MOISTENED (will still have some lumps).

    Scrape into loaf pan or muffin tins. Bake until wooden pick inserted in center comes out clean, approx 33-40 min for a loaf and 25 min for muffins. Cool in pan 10 minutes, then remove and cool completely on a rack.

    Yhis is kinda unfrugal but if you take any favor of instant pudding and add it to the dry ingredients in your zucchini bread it reallt tastes good. Especially coconut cream. sometimes you can find off brand pudding for a reasonable price though
