Whole Wheat Banana Bread

Recipe Description

This recipe is great for those looking for more
fibre in their baked goods as well as those who
are watching their figures and/or diabetics as it
uses Splenda, whole wheat flour only and ground
flax seed.

The finished product is moist which is unusual for
100% whole wheat baked goods.

Preparation Steps:

Preheat oven to 350F degrees

Prepare 9x5 inch loaf pan.

Add vinegar to milk to create butter milk or
substitute with the real thing.

Mash banana's and set aside.

Ingredients:

11/3 cups whole
wheat flour
1 cup ground flax
seed
1/2 cup Splenda no-
cal granulated
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
11/4 cups mashed
bananas (3
bananas)
1 egg
1 tbsp oil
1/3 cup skim milk
1/2 tbsp vinegar
2 tsp vanilla
1/4 cup chopped
walnuts

Serves:

8

Directions:

Blend dry ingredients in one bowl.

Blend wet ingredients in another.

Pour wet into dry and mix well until all is wet. Be
careful to not over mix.

Optional: Add nuts and stir.

Pour into pan and bake until set, aprox. 45 min.

Let cool for approx 30 mins. Loaf makes 8 slices.

As I have made this recipe a few times over, I've tweaked it a bit but its more to my family's preference (aka my dad the judge lol)

I've increased the mashed bananas to 1-3/4c instead of the 1-1/4c (or used 3 x med-lg banana's instead of 3 x sm-med banana's) and added an addt'l spoon of oil...all to help to make it more moist. I guess its personal preference.

I think I bumped up the cinnamon to 1 tsp from 1/2 as well and added 1 tsp allspice - I think I had to do that b/c there was more banana's.

I also omitted the nuts b/c I thought the texture was fine enough b/c it was whole wheat flour but thought about added them on top while baking.
