Lemon Bread
Lemon Bread
Recipe DescriptionRefreshing dessert on it's own or with fresh strawberries. The bread also freezes well so make you can always have some on hand for a quick tasty dessert.Preparation Steps:Preheat oven to 350º.Level of Difficulty:
Grease & flour an 8x4x2" loaf pan** (see below)EasyTime Needed:Ingredients:6Tbs margarineServes:Directions:
1 c. sugar
2 eggs
1 1/2 cups flour
1 tsp. baking powder
1/4 tsp. salt
1/2 cup milk
rind of one lemon
1Tbs lemon juice
Glaze:
juice of 1 lemon (1/3c)
1/2 cup sugar
~Fresh sliced strawberries for toppingCream margarine, sugar and eggs. Sift together flour, baking powder and salt; add to creamed mixture alternately with milk. Stir in lemon rind & 1Tbs. juice. Pour into pan. Bake 45-50 min.
Combine ingredients for glaze. Pour over bread while hot. Cool 10 min.; remove from pan.
To serve, slice and place on individual serving dishes with fresh sliced strawberries atop.
**May also use 3 mini loaf pans,bake 30-40 min.

I like lemon things too. I can't find anything with a strong enough lemon flavor to suit me......like lemon drops strong!
