Recipe DescriptionThese have been deemed "real pancakes" by the non-allergic members of the family. Fluffy, yummy, and adaptable recipe.Preparation Steps:Level of Difficulty:
These could be called Vegan, *if* the ingredients are indeed vegan. Since we're avoiding for allergies, I can't promise there aren't some animal derived nutrients in my brands of margarine and soy milk. So I don't call them vegan.EasyTime Needed:30 minutesIngredients:2 cups All Purpose FlourServes:Directions:
2 Teaspoons Sugar
2 Teaspoons Cinnamon
4 Teaspoons Baking Powder
2 Cups Soy Milk
2 Tablespoons Vegetable Oil
2 Tablespoons Water
2 Teaspoons Vanilla Extract
4 Tablespoons Soy Stick Margarine (dairy/casien free)Mix dry ingredients. Add soy milk, oil, water and vanilla and mix just until combined - a few lumps are fine, don't overmix.
Set batter aside to rest while heating a large skillet. Add margarine to skillet to melt. When melted, pour margarine into batter and mix.
Pour @ 1/4 cup of batter onto hot skillet for each pancake. Cook until bubbles form on surface, turn and cook until done.
*this recipe works with 1/2 white and 1/2 wheat flour. Other adaptations we've tried are using chocolate soy milk, adding chocolate chips. Plain and vanilla flavored soy milk work equally well.
