    Default Baked Eggs

    Preheat oven to 350 degrees.

    Oil of butter a 12 cup muffin tin (or a 6 cup if you prefer).

    You can put one egg into each cup of the tin and bake for 9 to 12 minutes depending on how well done you want your eggs to be.

    or:

    you can place a slice or part of a slice of soft pre-cooked back around the edge of each cup and then put the egg in. That way you have both your bacon and egg. They should slide out easily.

    or you could put a small circle of ham on the bottom of each tin and lay a fourth of a slice of cheese on top of the egg.

    If you are cooking for a crowd, it's easier & beats frying or scrambling.

    You can do a lot with these. DH uses canadian bacon because it is lower in fat, but plain ol' deli ham works too. You can also scramble the eggs and add chopped ham (or turkey, or sausage) diced peppers or onions, even cooked, drained spinach, to make mini omelet muffins. Plus, if you scramble the eggs it's easier to remove a couple yolks first, for those who are eating low cholesterol.

    I like these because i like my eggs with a "runny" yolk and a lot of times, when frying, the yolk bursts and cooks too quickly. DH likes hard cooked eggs, so if I time it just right, the eggs in the center are perfect for me and the outside eggs are perfect for him. Saves cooking time also.
