    Lemony Yellow Pudding Cake


    Recipe Description
    Quick version of a lemon cake. Moist and flavourful.
    Preparation Steps:
    Preheat oven to 350*
    Level of Difficulty:
    Easy
    Time Needed:
    1 hour approx
    Ingredients:
    * box of yellow cake mix
    * pkg instant lemon pudding
    * 4 eggs
    * 1/4c veg oil
    * 1c water
    * homemade/can frosting (optional)
    Serves:
    6-12 servings depending on how big you cut slices
    Directions:
    Combine all ingredients in bowl and beat with hand mixer for 2 mins on medium speed.

    Pour into greased & floured cake pan(s).
    (I used 2 x 8" spring form pans)

    Bake at 350* for 50 mins or until toothpick comes out clean.

    Let sit and cool for 10 mins before moving to a cooling rack. (I let mine stay in the spring pan for a few hours until I was ready to assemble cake)

    Once removed from cake pan, cut the little bump off the top of each round to make it even then cut each layer into half, total of 4 layers. Use lemon cake filling on each layer before stacking on the next layer. Ice/frost with fave recipe or from a can like I did. Chill & let set before serving. Enjoy!

    I am making this AND your rainbow cupcakes this weekend for a family get-together. I was thrilled to see those cupcakes. I'm putting together a special snack table for the kids, and was looking for ideas when your recipe showed up. Thanks for your great timing! I am sure they're gonna love them!

    Oh, THANKS!

    I love lemon stuff. A good rainy day here to make it. Think I will use lemon pudding with some lemon zest in it for the frosting!

    Family said it was just right - the lemon taste. But being a lemon fanatic - I wanted more lemon lol. So next time I make this cake I'm upping the lemon factor somehow

    That's why I made it too - family gathering and we didn't want run of the mill grocery store white birthday cake. But I did make plain vanilla cupcakes with a twist!

    Pudding box I used was regular size? I didn't know they came in larger sizes. This one made 4 x 1/2c servings, if that helps.
