    Default 1-2-3 Cake

    1-2-3 Cake


    Recipe Description
    This is a large and very rich cake with out any frosting, just a thin glaze. Excellent served with fresh fruit.
    Preparation Steps:
    Gather and measure ingredients and prep tube pan.
    Level of Difficulty:
    Easy
    Time Needed:
    1 1/2 hrs.
    Ingredients:
    -Cake-
    *1 cup soft margarine/butter (2 sticks)
    * 2 cups sugar
    * 3 cups flour
    * 3 large eggs
    * 1 tablespoon baking powder
    * 1 teaspoon salt
    *2 tsp vanilla
    * 1 cup milk
    -Glaze-
    *1 1/2 - 2 cups powdered sugar
    *1 tsp vanilla extract
    *just enough water to make a thin glaze
    Serves:Directions:
    In either a stand mixer or large bowl with electric hand mixer, cream together margarine/butter until fluffy.
    Add eggs, one at a time, letting them mix between each addition.
    Add all dry ingredients in one bowl.
    Add wet ingredients in another bowl.
    Alternately add wet and dry ingredients into mix, in about 3 batches.
    Pour batter into prepared tube pan.
    Bake at 350 for approx. 1 hour.
    While cake is cooling, make glaze.
    Add just enough water to make a thin glaze.
    Once cake is completely cooled, using a spoon, glaze cake.
    Serve with fresh fruit if desired.

    That really does sound good. I might need to try that with some orange flavorings in it for the reunion this fall.

    I've thought about adding a bit of lemon or orange juice to the glaze, but never actually did...but it DOES sound good in theory...
    If you try that, please let me know how it turns out...
