When I “need” a cake very quickly, I bake a roll of cream. Celies cannot just go to the bakery - they have to come up with something 😉

So, take the following ingredients

for the dough

4 eggs, separated
25 g sugar (if you like, take more)
100 g corn starch
if you want to be on the safe side, add 1 knife tip of baking soda or baking powder

for the filling

200 ml cream
1/4 tsp cream stiffener
1 tablespoon of vanilla sugar
2 tablespoons of blackberry jam

Preparation:

The egg whites are beaten very hard with the sugar then the egg yolk is added struck again about 2 minutes.

Now the starch (and the baking soda) are carefully added.

Now spread the mass as evenly as possible on a baking sheet lined with baking paper and bake at 180 ° C until the surface is slightly brown.

Attention, this is pretty quick!

In the 10 to 12 minutes, whip the cream with the vanilla sugar and cream stiffener and heat the jam so that you can spread it thinly on the dough.

As soon as the dough is baked, you pull it with the baking paper and flip it on a clean tea towel and remove the baking paper.

While the dough is still warm, spread it with the jam and cream and roll it up.
