Hello all, I am in a craze for making granola bars, but I am having a hard time with the sugar part. I have used honey very successfully, but it is very expensive. I don't want to use corn syrup either. I want to use a straight sugar sweetener. I am having trouble because the sugar does not give me the desired consistency. I want a slightly chewy granola bar, but when I add the syrup it is not gummy enough. I get delicious granola clusters, but It does not have the cohesion to make a bar. Does anybody have any ideas how to make a syrup that will have the thickness and be sticky enough to hold together and won't just crystallize and fall apart?
