    Default Penuche- my dad's favorite candy

    This is what I make for him at Christmas and his birthday.

    PENUCHE

    1 1/2 c. granulated sugar
    1 c. brown sugar
    1/2 c. light cream
    1/2 c. milk
    2 T. butter or margarine
    1 t. vanilla
    1/2 c. walnuts or pecans

    Butter sides of heavy 2- quart saucepan. In it, combine sugars, cream, milk, and butter. Heat over medium heat, stirring constantly, till sugars dissolve and mixture comes to boiling. Cook to soft ball stage (238 degrees) stirring only if necessary. Immediately remove from heat and cool to lukewarm (110 degrees) DO NOT STIR. add vanilla. Beat vigorously till candy becomes very thick and starts to lose it's gloss. quickly stir in nuts and spread in buttered shallow pan. Score while warm, cut when firm.

    light cream Can contain anywhere from 18-30 percent milk fat, most commonly 20 percent (as compared to light whipping cream which is 30-36%, heavy whipping cream which is 36-40%, and half-and-half which is half milk and half cream with only 10-12% milk fat).


    This is a fudge type candy-- not hard like lollipops or peanut brittle---- not gooey like caramel.
