    Default easy divinity?

    any one got a recipe for this? might try my hand at more candy making this year, it would make the gifts stretch.

    Here is the one I make every year. Can't get much easier than the microwave
    Mary's Microwave Divinity

    3 cups sugar
    1/2 cup light corn syrup
    2/3 cup water
    1/4 teaspoon salt
    2 egg whites
    1/4 teaspoon vanilla extract
    1 cup of chopped pecans
    In an 8 cup measure, combine sugar, corn syrup and water. Microwave on High for 16 to 19 minutes until mixture reaches hard boil state (260 degrees). NEVER stir hot syrup. Add salt to egg whites in a large mixing bowl and beat on high speed until stiff peaks form. Pour syrup in a thin stream into egg whites, beating constantly until mixture loses it gloss and thickens, about 4 or 5 minutes. Stir in vanilla and nuts. Drop at once by spoonfuls onto foil.

    thanks! now a couple of questions.lol i don't have a candy thermometer so how do i tell what the temp is? and do you have to add the nuts. both dh and db have false teeth

    I think the nuts really make the candy what it is, and it just wouldn't taste the same without. However, I have made it before with the nuts chopped very, very, very fine, so the flavor was still there.

    Note: do NOT make this when the weather is humid--unless you decrease the amount of water that the recipe calls for. Your candy won't set. Ask me how I know
