Recipe DescriptionCream and butter free...just a crispy caramelized candy with nuts.Preparation Steps:Toast the nuts, either in the oven or pan, before making the mix.Level of Difficulty:
have a pastry brush and glass of cool water on hand.
Spray a jelly roll pan with non-stick spray.EasyTime Needed:20 mins plus coolingIngredients:2 cups sugarServes:
1/2 cup water
1 cups sliced almonds, crumbled pecans or any broken favorite nut.varies, about 12 or so servingsDirections:Place water and sugar in a medium sauce pan trying not to splash up on the sides. Stir over high heat until the sugar is dissolved.
Once dissolved, do no stir. Allow the mixture to boil 10-15 minutes, monitor the color of the mixture. You'll want to go for a golden color.
While boiling, use the pastry brush, dipped in water, to wipe down the sugar grains that pop up onto the side of the pan.
Once the mixture reaches a golden color, remove from heat and stir in nuts. If you are using a dark non-stick pot and can't tell the color of the mixture, take a small drop on a spoon and drop into the glass of cool water. If the mixture is dark, it may be bitter.
Spread the mixture onto the jelly roll pan to cool. Once cool, break into bits and store in an airtight container. Or wrap portions in parchment to give away.
