    Pancake Burger Bash


    Recipe Description
    A very good recipe that I came across in an Amish cookbook my mother gave me entitled "Wonderful Good Cooking." Hope that you enjoy!
    Preparation Steps:Level of Difficulty:
    Easy
    Time Needed:
    30 minutes
    Ingredients:
    1 1/2 lbs ground beef
    1 tsp salt
    1 (8oz) can tomato sauce
    1 can whole kernel corn (undrained)
    1/3 c chopped onion
    2-3 tsps chili powder
    1 (1 lb) can tomatoes
    --------------------

    For the dumplings:

    1 1/2 c bisquick
    1 egg
    1/2 c water
    1/2 c crushed corn chips (Fritos)
    2 tbs cooking oil
    Serves:
    4-6
    Directions:
    In dutch oven or skillet, brown ground beef and onion; drain. Stir in salt, chili powder, tomato sauce, tomatoes and corn (with liquid). Simmer 10 minutes, stir occasionally.

    Make the dumplings.

    To measure bisquick, lightly spoon into cup and level. In bowl, combine bisquick with corn chips. Add egg, oil, water; mix well. Spoon batter over bubbling meat mixture. Cover; simmer 15 minutes without removing lid. Dumplings will be puffy and dry on top.
