Default Looking for a recipe for...

a chocolate flavored cookie that I could press into mini muffin pans and put a "thumbprint" in so that after they are cooked I can fill the thumbprint with red or pink frosting for valentine's day.

Since I get such GREAT recipes from everyone here on this site, I thought I would check with the bakers here first.

    Thanks everyone in advance.

I have the absolute perfect cookie for you! I normally do them as "balls" and they flatten out, but I'm sure you could put them into a muffin tin, then press them down!

    1/2 c. oil
4 1 ounce unsweetened chocolate, melted
    2 c. sugar
    4 large eggs
    2 tsp vanilla extract
    1/2 tsp salt
    2 c. flour
    2 tsp baking powder
    1 c. powdered sugar

Mix oil, chocolate, and sugar. Add one egg at a time until well mixed. Add vanilla, salt, flour and baking powder. Chill over night or for several hours. Heat oven to 350 degrees. Shape dough into little balls of about one tsp each. Roll in the powdered sugar. Instead of placing them on the baking sheet as directed, just pop them into greased muffin tins (they will flatten themselves, don't flatten them or they won't look as pretty...they get a crinkle in the white sugar and the chocolate shows through). Bake 10 -12 minutes. Makes about 50 cookies.

These are super soft, so they would be perfect to make a thumbprint well to add pink frosting! Plus, they taste absolutely divine! They are like brownies in cookie form! On a scale of one to 10... in my book these are at least a 15!

Thank you so much. I am going to try them out tonight. That way if the kids like them, I can make them again on Thursday night for the kids to take to school on Friday.

How were they? Did you make them for the kids' classes?

    They sound good!

    Wink

Well I don't know what I did but I couldn't make a thumbprint in these let alone roll them in sugar. So I improvised.............. I baked them and iced them . Turned out really good
