Thread: Chocolate Ravioli

Chocolate Ravioli
2oz. Semi-sweet chocolate
1 Cup Butter
1/2 Cup Sugar
1 Egg
1 tsp Vanilla
1/2 tsp Chocolate extract
1/4 tsp Baking Soda
1 dash Salt
2 1/2 Cups Flour
1 1/4 Cup jam of your choice ( I just use more chocolate)
Confectioner's Sugar
Melt chocolate in top of double boiler over hot, Not boiling water.
Remove from heat,cool.
Cream butter and sugar in large bowl until blended.
Add egg,vanilla,chocolate extract,baking soda,salt and melted chocolate. Beat until light.
Blend in flour to make stiff dough.
Divide dough in half.
Cover, refrigerate until firm.
Preheat oven to 350 degrees F.
Lightly grease cookie sheets or line with parchment paper.
Roll out dough, half at a timeto 1/8 inch thick between two sheets of plastic wrap.
Remove top sheet of wrap (if dough gets too soft and sticks to plastic, refrigerate until firm)
Cut dough into 1 1/2 inch squares place half of the squares 2 inches apart on cookie sheets.
Place1/2 tsp jam in center of square top with anothoer square use a fork to press edges together to seal. pierce the center of each square.
Bake 10 - 12 minutes or till edges are browned.
Remove from pan cool on wire racks
Dust with confectioners sugar.
Makes 6 dozen cookies

Very addictive!!almost like some sort of drug! hahaha, at least that's what my family says.
