I made the peanut butter version of these last night for DH. Normally I buy expensive pre-made bars at the health food store for him to bring to work (keeps him from going to the convenience store/fast food as much) and when I went shopping yesterday, I decided I wasn't paying that price for them.

I remembered seeing this thread, realized I had all the ingredients and made a batch. I had just enough natural PB but it was at the bottom of the jar and it was dry so I only used 1/2 cup of flour and increased the butter to about 1/4 cup.

I asked DH if he wanted PB or with craisins, he wanted PB. They turned out great!! DH has already sneaked a couple. I told him if he ate them all he wouldn't have any for work this week.

Thanks for the recipe! Looks like I'll be making these alot more.

Now I have to go stock up on oatmeal, honey, PB, and brown sugar as I realized I'm low on all of them. Another bottle of vanilla extract wouldn't hurt either.

I made chocolate chip and walnut ones tonight. I can't bake anything without nuts in it! LOL These are soooo good.

I am dying to make these, but I am out of honey. Do you think I could substitute something else?

    TIA!

I've used corn syrup and it worked just fine.

Thanks. I have quite a few boxes of oatmeal and was wondering what I would do with them all. Sounds good. Will make some this week-end!

I just made these and they are great! I substituted some dried cranberries, strawberries and blueberries that I had for the chocolate chips. Oh and I also added some sliced almonds. Yummy

I will have to try these with the peanut butter- they sound great and I just need to get some more brown sugar. Can't wait to try them!

I made these again this morning and used half butter and half peanut butter. They are fantastic! I also used the mini chocolate chips and some chopped nuts. I love them! My only problem was they were sooo crumbly. I waited a half an hour after taking them out of the oven. Maybe I need to let them cool completely. I'll see how they are when i get home. I'm getting requests from people at work to make them! LOL

    Thanks again!

Tried these for the first time today. They're delicious Next time I'm going to add raisins, or I'll take out the chocolate chips, and add cinnamon & raisins.

    Thanks Elphie
