Cheesecake bars

Recipe Description
Two versions: with nuts and without - both creamy and delicious!
Preparation Steps:
Leave butter and cream cheese out to soften

Line baking pan with foil, if desired.

Nutless crust:

1 c. flour
1/4 c. powdered sugar
1/2 c. butter, softened

Nut crust:

2/3 c. finely crushed graham crackers
1/2 c. flour
1/2 c. chopped walnuts or pecans
1/4 c. sugar
1/2 c. butter, melted


8 oz cream cheese
1/3 c. sugar
1/2 t. grated lemon peel
2 T. finely crushed graham crackers (optional)
1 egg
1 T. lemon juice

Nutless crust:

Combine flour and powdered sugar in med bowl. Cut in butter with pastry blender or two knives until crumbly. Press into bottom and 1 inch up sides of 8x8x2 baking pan.

Bake at 350F for 20-25 minutes, or until golden.

Nut crust:

Sift together graham crackers, flour, chopped nuts, and sugar. Add butter; mix until crumbly. Pat into ungreased 8x8x2" baking pan.

Bake at 350F for 12 minutes.


Cream together cream cheese and sugar. Add egg, lemon peel, and lemon juice. Mix well.

Pour over baked layer. Bake at 350F for 20-25 minutes, or until filling is set.

Sprinkle with graham cracker crumbs if desired.

Cut into squares
