    For making sausage and egg mcmom, I like to bake scrambled eggs in muffin tins. The trick is to not overfill the cups because the eggs puff up. But they mash down nicely enough to fit on the biscuit or English muffin.

    Thanks for the tip on the microwave eggs. DH just made me my birthday breakfast and we have bacon and potatoes left so I will give this a whirl!

    My family loves breakfast tacos. I think this would be a cheaper way to provide them for them. Thanks for sharing the recipe!

    I make something like this all the time, usually just scrambled eggs and tomatillo sauce or salsa, whatever I have, maybe some chorizo, but I never considered freezing them. The scrambled eggs don't turn out rubbery?
