    Default Baked Egg Rolls

    so glad i am back so i can share some of my new favorite recipes. I have been doing ww, and it is doing great.. but i still crave those foods that i am guessing helped me to become heavy.. you think..lol

    so this is easy, easy..

    baked egg rolls

    what you need,
    soy sauce
    ginger
    garlic
    bag of coleslaw cabbage mix
    mushrooms (about 6)
    water chestnuts (about a half a can)
    pkg of large eggroll wrappers

    what you do,

    in a pan with a touch of olive oil, add the ginger and garlic and then the bag of coleslaw, toss a bit and then add soy.. now not too much because you dont want the mix to become to wet..

    chop up the mushrooms and the water chestnuts and toss with it.

    when sautee to how you like it, i keep mine a little crisp.

    lay down an egg roll and roll like on pkg.

    lay these on a cookie sheet (mine is lined with foil, cause i am lazy) and lay them out.

    spray the top of them with pam and pop in oven at 400 for about 10 minutes, keep an eye on them they get brown.

    Then make a sauce and enjoy..

    with this same mix, you can make wontons, for wonton soup. potstickers, fried wontons...

    it even freezes well.

    just wanted to share.. you can also add ground turkey if you need the meat. i use the mushroom to replace the meat...

    There's an OOP Weight Watchers cookbook I use a lot, which you might be able to find on half.com or some other used bookstore. It's called Take Out Tonight and it has sections for various ethnic foods such as Chinese, Mexican, etc. Lots of great recipes slimmed down to fit into WW's Points plan. It's great for when you're craving ethnic restaurant foods and don't want to blow up your food plan.

    I want to try these recipe. The egg rolls sound yummy.

    What mix are you talking about that you can use to make wontons, pot stickers? Is it the ginger, watercress, mushroom, and coleslaw mix?

    water chestnut.. yes that mix.. i use it with all of them.. from wonton soup to egg rolls.. sometimes i do a little ground turkey in the mix too.. just to shake it up.. salad shrimp is another good one..
