    Default Chai Tea

    This is a really lovely drink and is the latest 'in thing' at good cafes. It's your normal tea, but is milkier and has a whole bunch of delicious spices added to it. Does anyone have a recipe for this?

    I don't know the recipe off the top of my head, but my dh buys the loose teas and makes this himself. He used to work in a cafe and that's where he learned how. I'll ask him for you. I LOVE it

    Chai is a delicious Indian drink. Even though it's the latest and greatest here, I beleive those in India have been drinking it for years and years....

    Here's a good recipe I got off the web that I use:
    Try this:

    Boil 5 minutes, then steep 10 minutes:

    1 Tbsp fennel or anise seed
    6 green cardamom pods
    12 cloves
    1 cinnamon stick
    1/4" ginger root, sliced thin
    1/4 tsp black pepper corns
    2 bay leaves
    7 Cups water
    Add, bring to a boil, and simmer 5 minutes:

    2 Tbsp Darjeeling tea
    Add:

    6 Tbsp honey or brown sugar
    1 Cup milk

    I love Chai but I'm not really fond of the cardamom.....this is my version of Chai, though I've been told it can't be called Chai without the cardamom...it's Milk Tea....Whatever!!!

    6 c water
    6 teabags
    Bring to boil and let boil 5 minutes. Remove teabags.
    Add:
    1/4 c sugar (you can add more or less to your liking.
    1-2 t cinnamon
    1-2 t cloves (if desired)
    Pinch of black pepper
    1-2 t nutmeg (if desired)
    Stir until spices and sugar has dissolved.
    Add:
    6 c milk
    Heat till hot but DO NOT BOIL!!! Can drink hot or can pour into container
    and refrigerate for later reheating or to serve cold.
    This will only last a five days MAX in the frig though so you have to drink it fast but that's not usually a problem with me.
