Need ideas for a meal with chicken

Help! I won't be home until at least 9, probably 9:30 tonight, so I need ideas for a meal to put in the crockpot for my family. I have some frozen chicken breast pieces (uncooked), lots of fresh veggies (carrots, broccoli, cauliflower, celery). I tried making homemade chicken noodle soup recently, but it was awful, so am not wanting to repeat that. I do have rice and probably some pasta around.

So bring on the ideas. Thanks.

I like doing the chicken in the crockpot with cream of mushroom soup, some milk (about a can full), onion soup mix and some pepper. Sometimes I throw in a diced up onion too. Cook on low all day long and then add some sour cream or plain yogurt right before serving. Serve over noodles or rice. Yummy! Kind like chicken stroganoff.

You can cook the frozen chicken all day in Italian dressing, then serve it that way over the pasta or rice.

Or, here's my version of chicken stroganoff-- cook as above, then an hour before serving, chop up the chicken and add in a brick of cream cheese, 1 cup chicken broth, 1 can cream of chicken soup, and a little garlic and basil. I also throw in mushrooms if I have them. Serve over pasta.

Thanks. They both sound yummy. I needed something today that is all in one since I won't be home until late.

Here's what I did and I hope it works. I mixed rice with water, 1/2 can cream of mushroom soup, and 1/2 can cream of chicken soup. Then I put in the partially frozen chicken, more soup, and broccoli on the top. I sure hope it works.

Back to the grindstone here at work.

Forgot to add that I also added a package of dry ranch dressing.

Frozen chicken breasts
Can of cream of mushroom soup
1 cup milk
a pkg cream cheese
1 pkg dry italian dressing mix

This is yummy served over noodles!
