crockpot corn chowder
Crock Pot Corn Chowder
3 cups corn
1 can of creamed corn
2 carrots peeled and sliced
4 strips bacon cooked and crumbled
6 cups chicken or vegetable broth. I used turkey stock leftover from cooking a turkey carcass
1 med onion diced
1/2 tsp thyme
1 tsp. salt
1/2 tsp. pepper
Combine in crockpot cook on low 6-8 hours
add:
1 cup half and half or evap. milk
4 oz american cheese
3/4 cup potato flakes or thicken with flour
I tried this today and it was really good. Put croutons over the top in the bowl.

Yum! THanks! I bought some corn chowder mix at the Olde Mill in Pigeon Forge and it was great, but expensive. I am glad to have an alternate!

That sounds really good. I have everything here to make it except bacon... I might go ahead and try it without the bacon. Thanks for sharing!

It will be fine without the bacon. The original recipe didn't call for bacon, but we like bacon with chowder. Enjoy!
