    Default Crockpot Spanish Chicken

    Here is a recipe I think you'll enjoy. I'm sorry I don't have exact measurements as this is just something I'm used to throwing together on my own.

    4 to 6 skinless chicken breasts or thighs
    salt & pepper
    1 small chopped onion
    1 regular sized can tomatoes (can be stewed or diced)
    green stuffed olives (use as many as you see fit)

    Salt and pepper chicken and place in crockpot with all other ingredients and cook on high approximately 5 hours. Serve over rice with a side of green beans. This makes a very pretty dish.

    i have a whole chicken to cook, maybe i'll cut it up and do this with some of it!

    I forgot to add that any leftover juices can be used to make soup. Just add your leftovers to it. Today I added leftover spinach and it made a good soup. You could add pasta,beans, rice or potatoes and just about any vegetables. Try this with other crockpot leftover gravies or juices too.
