Dinner party!
Hi everyone! Yes,I'm new to Frugal Village. I need some suggestions. I will be cooking for a party of 40 people and would like some ideas on cooking a large quanity of carrots for my party. (40 servings) I have borrowed plenty of crocks. I have been cooking for over 40 years but I have used a crockpot very little. HELP! Any recipes and advice would be welcome. Thank you in advance, Al

I've cooked for large groups before but never tried to plan out one kind of veggie to serve the whole group......haven't ever done anything fancy with carrots either ...just brown sugar and butter in the water with them while boiling....I would think this could be done in crock pots with about 3 large carrots per person. Sorry I couldn't be more helpful......ya got me yearning to cook for a large group though...it's been quite awile.

This is a fav although not crockpot. You could cook the sauce and carrots seperately & then put in crockpot (according to casserole directions)on low to warm thru. Fancy and good.

Oh, I would suggest that you may want to try the Reynolds crockpot cooking liners. With that many crockpots, it will cut down on the clean up after your dinner party, LOL.

I don't think I've heard of many crockpot carrot recipes. Nothing comes to mind, but maybe you could adapt this recipe and substitute carrots for the sweet potatoes. I'd try a test run of this and see how much it makes. I would think serving size would be about 1/2 cup per person.

CROCKPOT SWEET POTATOES AND APPLES
5 medium sweet potatoes, peeled and sliced into 1 inch thick slices
3 apples, peeled, cored, and sliced
¼ t. nutmeg
¼ t. cinnamon
¼ c. maple syrup
2 T. melted butter (no substitutions)
¼ c. chopped pecans or walnuts (optional)
Place potatoes in bottom of slow cooker, then layer sliced apples over potato. In a small bowl, combine spices, syrup, and butter. Drizzle syrup mixture over apples and potatoes. Cover and cook on low for 6 hours. If using nuts, sprinkle over apples and potatoes during last 30 minutes of cooking time.

CROCKPOT SWEET CARROT STRIPS
1 pound carrots, peeled and cut into 2-inch-long strips
1/2 cup brown sugar
3/4 cup apricot/pineapple preserves
1/4 cup butter or margarine
1/2 cup pineapple juice
1/2 cup shredded coconut, optional
Place carrot strips, sugar, preserves, butter and pineapple juice into crock pot and cook on LOW for 4 hours.
Serve as a side dish with pork, beef or chicken If using the coconut, use it as garnish after the carrots are cooked.
CROCKPOT CANDIIED CARROTS AND WALNUTS
4 (16 ounce) packages frozen sliced carrots
1 (12 ounce) bottle pancake syrup
1/2 cup brown sugar, packed
1 (8 ounce) bag chopped walnuts
Combine all ingredients in the 5-qt crockpot. Stir well. Cover and cook on HIGH for 6 hours.
