    March 2009 Baking Challenge.

    No one else has started a new thread for March so I am jumping in. We have already done quick bread and chocolate.

    So how about cakes? Could be like an angel food cake (lower in calories), pound cake, cinnamon apple cake?

    There are alot of options as far as cakes go. There are some that are low-cal for us on diets. Or take a nice cake to work for co-workers.

    I will say 3 for this month.

    Anyone else willing?

    i have yet to find a good vegan cake recipe but if i do, i'll definitely make it

    have you decided what type of cakes you're going to make? layered sounds awesome.

    We are not much on cake eating, so I think I'll try just one. I'm thinking of some sort of ding-dong or ho-ho knockoff, if I can find a good recipe. Those would be small in size, which is just right for us non-cake eaters! And then I can give the rest away!

    flour is becoming a vegan issue. so i have to check out the price of rice flour. how much does everyone typically spend on flour?

    enriched flour contains nutrition which can come from animal or plant sources. riboflavin is just one example.

    i meant the price of regular flour. the only reason i was baking is because we already had flour. it was 3 something in walmart and i was just curious how much ppl typically pay for flour.

    Oh, flour here at Walmart for a 10 pound bag is $4.79. I think that is pretty high.

    We're not big cake eaters either. It's usually brownies and cookies around here. So for this month I'll try just one. I came across this recipe, and I just so happen to have all the ingredients So Jewish Apple Cake it is than! If I get to do another, I'll post it on here.

    Jewish Apple Cake

    6 apples, use McIntosh apples
    1 tablespoon cinnamon
    5 tablespoons sugar

    2 3/4 cups flour, sifted
    1 tablespoon baking powder
    1 teaspoon salt
    1 cup vegetable oil
    2 cups sugar
    1/4 cup orange juice
    2 1/2 teaspoons vanilla
    4 eggs
    1 cup walnuts, chopped (optional)

    Preheat oven to 350 degrees. Grease a tube pan. Peel, core and chop apples into chunks. Toss with cinnamon and sugar and set aside.

    Stir together flour, baking powder and salt in a large mixing bowl. In a separate bowl, whisk together oil, orange juice, sugar and vanilla. Mix wet ingredients into the dry ones, then add eggs, one at a time. Scrape down the bowl to ensure all ingredients are incorporated.

    Pour half of batter into prepared pan. Spread half of apples over it. Pour the remaining batter over the apples and arrange the remaining apples on top. Bake for about 1 1/2 hours, or until a tester comes out clean
