June 2010 Baking Challenge
Is it safe to assume no one wants to bake anymore as it gets more hot outside? Any ideas for June's challenge? Mine will be that 'from scratch savory item' seeing as I didn't get to it for May however in lieu I baked a ton of other things.
Who's up for the June Challenge?

I could be.......depends on how hot we get and what it is.
what is the verdict for this month? what's it gonna be?
Too bad it isn't cooking/baking, but I could go for some really good FRUIT salads.........been craving those.
How about a 'no-bake' challenge....

I never got to bake my strawberry rhurbarb pie so I am going to get that done this month.
I am also going to make a jello salad with fruit in it for the weekend.

I am baking a pool cake for our library's beach party lock in. It was on the cover of a magazine, maybe family circle. What it looks like is a two layer cake iced with blue icing and the outside edges are covered with kit kats. It has a diving board made out of something, maybe a cookie with a teddy graham jumping into the pool. I bet gummy ring candy would be cute tubes. Can not wait to make it. Will post pictures.

I am baking different variations of friendship bread. My MIL gave me some starter a while back. I have four chocolate/chocolate chip vacuum sealed and in the freezer. Tomorrow I will bake 4 vanilla. When the next batch is ready I will make lemon walnut. Then I am going to make the vanilla and put dried apricots in it.
Then I am fixed up for desserts and will have them to take to parties also. Everybody loves them!

Being somewhere considerably cooler than most of you, I will still be baking and would like to join in the June challenge if I may? I've got a batch cooking day planned and to fill space in my oven I'll be making some little coconut cupcakes and perhaps some carrot muffins too. This is just to fill up the second shelf though really, as there'll be a couple of savoury pies on the top shelf. And if I can squeeze it on the bottom, I'll make some cereal bars that just cook low and slow in whatever heat there is remaining.
I figure that if I can use the oven once early in the day it won't heat the place up too much.

Thanks, Libby. I do have a recipe - it's based on Nigella Lawson's recipe from "How to be a Domestic Goddess" and is the recipe I always use. Except this time I shall divide it between 12 muffin cases and ice with some coconut buttercream instead. My mouth is watering just thinking about them and I might not be able to wait for a week on Monday!
I'm not sure where I'd stand on posting the recipe though.
