    Default October Baking Challenge

    Surely we might be in the mood to do some baking. I've got lots of apples to use up, so probably apple muffins. I don't do pie.

    Do you have something in mind? Maybe some yummy Halloween goodies?

    Why no pie? I didn't either until over a year ago and now I am HOOKED on them.......but I buy the crust. Found the best apple pie recipe on-line.

    I will be baking next week as I have had a 'request' for food for a bake sale.......UGH..........probably just some brownies.

    Also have had a request for me to make the baklava again.......YEOW.....sure won't be for a bake sale. Not sure I have the patience for that again.........but it was good!!

    I still need to get out and get my apples at the orchards.

    I went to the apple orchids last week and got some peaches too but ate them up.

    I've never been a pie person and I don't like pie crust at all. Never made it before or bought it and don't plan too.

    I LOVE pie but I am making these today =) Sorry to hijack in on the thread =)
    PUMPKIN BARS & CREAM CHEESE FROSTING

    4 eggs
    2 c. sugar
    1 c. oil (vegetable)
    1 can pumpkin
    2 c. flour
    1 tsp. soda
    1/2 tsp. cinnamon
    1/2 tsp. cloves
    1/2 tsp. nutmeg
    3/4 c. chopped pecans (optional)

    Mix all together by hand (I use a mixer). Pour into greased and floured jelly roll pan. Bake at 350 degrees for 25 minutes.

    FROSTING:

    3 oz. cream cheese
    3/4 stick butter (6 tbsp.)
    3 c. powdered sugar
    1 tsp. vanilla
    1 tbsp. milk

    Beat all together in mixer. Spread on cooled bars.

    I'm in! I'm making Apple Oatmeal Walnut cookies today, will probably make some Banana Bread as well.

    Kim those Pumpkin bars look good. I might have to make some of those next week!

    They are DELIGHTFUL.... But DD has changed her mind now she wants pumpkin pie..... I guess I will make the bars next week

    I made an apple pie on Saturday...
    Making 4 dozen gingerbread mini-muffins tonight

    I want to bake more this month. The weather is much cooler and I miss sitting down and planning some massive baking.
