    Default 2013 Menu Planning Challenge

    Just finished making our menu and didn't see a new thread for this year so figured I get us started.

    To finish out this week:

    Wednesday, 01/02/13 - Baked Chicken with Potatoes and Carrots, Macaroni Salad

    Thursday - Marinated/Grilled Pork Chops, Macaroni Salad, Green Salad



    Friday starts our new week:

    Friday - Homemade Pizza

    Saturday - Chicken Wings, Green Salad

    Sunday - Ground Beef and Potato Casserole, Broccoli and Cauliflower

    Monday - Brinner (Wunsagin...isn't that your saying? I'm adopting it )...Eggs, Sausage Gravy, Home Fries

    Tuesday - Beef and Broccoli, Rice

    Wednesday - L/O or Heat and Eat

    Well - I don't put much thought in menu planning. But I suppose I should if I want to lose weight and eat right.

    Tuesday - ffy (fend for yourself)
    Wednesday - baked whole chicken, baked potatoes, peas and carrots, cornbread
    Thursday - homemade pizza
    Friday - chicken soup made from the leftovers from the whole chicken

    That is something i really need to do is make a menue and stick with it.I make them and go by them for a few days then i go back to just not thinking about cooking until i get hungry then i pop something in microwave not healthy.

    Wednesday's L/O have changed...we're having some friends over for dinner. Keeping it simple and casual...Roasted Whole Chicken, Cottage Potatoes and vegetable salad.

    I am in!

    Wednesday:turkey n rice, Lima beans
    Thursday:spaghetti, cucumbers, toast, apples
    Friday: chicken pot pie, oranges
    Saturday: chili beans, apples
    Sunday: meatballs, gravy, potatoes, corn on cob, okra

    Lunch is almost always leftovers

    The homemade pizza turned into a pizza casserole. Works... Next time, we will use less meat in it and more "pizza toppings". And, I used up another jar of my home-canned tomato sauce.

    new menu for this week

    m- LO's
    t- pita pizza
    w- turkey noodle soup
    t- breakfast toaster sandwiches, potato patties
    f- crunchy burritos, mexican rice
    s- fried chicken, mashed potatoes, corn, gravy, sour cream biscuits
    s- chili

    the best part......I don't have to buy a. single. thing. Everything out of the freezer and pantry. When dh goes to town in a couple of days I'll have him get some milk but that's it.

    ~I'm in again. There's less uncertainty now than last year after our move to CO, then again from the rental to our new house. I know that's why I couldn't stay focused with this last year.
    This year we'll be eating a lot less meat, at least we will try to. I barely eat any anyway but if I can get everyone to love soup, beans and veggies the cost of food won't escalate so much. I made a list of meals under $5 and meals under $7. All should provide leftovers for lunches. The cheaper meals will be daily fare and the $7 meals will occur twice a week on Wednesdays and Sundays. Fridays has always been homemade pizza.
    So here's my menu for the rest of January:
    LO lasagna
    noodle soup and popovers
    buffalo drumsticks, stuffing, coleslaw, biscuits
    LO
    pizza
    corn chowder, rolls
    pork roast, mashed taters, green beans
    bacon spinach quiche
    LO
    hamburgers, french fries
    turkey filling over pastry
    pizza
    bean/rice/cheese burritos
    baked ham, cheesy scalloped potatoes, broccoli(more than $7 here but tons of leftovers!)
    LO
    veggie chili and cornbread
    chicken tacos and fixin's
    LO
    pizza
    ham and cabbage
    chicken paprikash, spaetzle and gravy, corn
    LO
    french onion soup and apple pie
    ham croquettes, mac & cheese, broccoli
    LO or Chinese take-out

    And I have nearly everything on hand in the pantry and freezer. May need to replenish butter, fruits and veggies and flour but I should be good on everything else. ~

    Saturday - Greek Salad with L/O Chicken, Crusty Bread

    Sunday - Salmon Patties (using fresh Salmon), Spinach Salad

    Monday - BBQ Portobello Quesadilla's, Tomato and Corn Salad

    Tuesday - Buffalo Chicken Wraps stuffed with Carrots and Celery

    Wednesday - L/O or Heat and Eat

    Thursday - Vegetarian Reuben's, Smashed Potatoes

    another great menu week, the only thing I have to buy at the store is....nothing! I am out of bottled bbq sauce but I prefer my homemade anyway

    M- chicken noodles, dumplings, cole slaw
    T- bbq sausage, pkg rice mix, LO cole slaw, veggie
    W- fiesta ravioli, green beans, mexican rice
    T- tuna casserole, peas, fruit
    F- crunchy burritos, LO mexican rice
    S- bbq ribs, au gratin potatoes, veggie, biscuits

    Gee.. it's been a week and half.. and I'm still thinking about it. lol

    I am going to get crack-a-lacking here.

    Monday: BF: yogurt. snack. apple. Lunch: leftover ch/rice soup + crackers. Dinner; ryvita and cottage cheese.

    Tues: BF: yogurt. Snack: orange. Lunch. Leftover ch/rice soup + crackers. Dinner: cheese and crackers

    Wed: BF: egg sandwich. snack banana. Lunch. Ramon noodles. Dinner: turkey and cheese sandwich.

    Thur: BF: yogurt. snack: apple. Lunch: turkey and cheese sandwich. snack carrots. Dinner: leftover ch/rice soup.

    Fri: BF yogurt. Snack: orange. Lunch: remainder of the leftover soup _ crackers. Dinner: mexican salad

    Saturday: BF: egg, ham+cheese sandwich. Snack. banana. Lunch: turkey and cheese sandwich. Dinner: chicken breasts and carrots.

    Sunday: BF: egg, ham and cheese sandwich on wheat bread. Snack Apple. Lunch; ramon noodles. Dinner pasta and left over chicken.

    Not a very exciting meal plan - however, I'm the type that cooks one thing and eats it until its gone. I'll eat the same thing all week long. It's just me - so it doesn't matter what I make.

    I have everything I need.. so no trips to the grocery store for me.

    Monday:
    Lunch will be store bought burritoes (found a really good deal on them at the manufacturer's outlet store)
    Dinner: hamburgers, tater tots

    Tuesday:
    Lunch will be hot dogs, leftover burritos, and hamburgers if there are any left.
    Dinner will be roast, mashed potatoes, broccoli, and cornbread.

    Wednesday:
    Lunch will be leftover hot dogs, leftover burritos, and nachos or quesadillas.
    Dinner will be chicken burritos.

    Thursday:
    Lunch will be leftovers.
    Dinner will be biscuits and sausage gravy and peas and carrots.

    Friday:
    Lunch will be leftovers.
    Dinner is beef soup from the meat and bones from the roasts that we had previously and leftover biscuits and cornbread from the previous dinners.
