    Ok my march meal plan got all jacked up, but despite that we only ate out one day due to a super late drs appt.

    Here we go for April! Now mind you, in April I'm like having a baby, so hopefully this works out.

    4/1- burgers grill out and fries, fruit
    4/2- L/O from grill out
    4/3- having a baby! Freezer meal Shepards pie for gpa rents
    4/4- still in hospital- freezer meal chili or chicken pot pie Braid for gparents
    4/5- home? Maybe not? Gparents cook or leftovers
    4/6-Ham and cheesy potato casserole. Veggie
    4/7- BBQ pulled pork. Prolly potato salad as well
    4/8- shrimp Alfredo
    4/9- red bell pepper soup from freezer
    4/10- chicken philly steaks
    4/11- taco night
    4/12- Italian supper (chicken parm manicotti)
    4/13- L/O
    4/14- taco pasta
    4/15- costco run- Rotisserie chicken w/veg
    4/16- pizza night
    4/17- Friday night fish fry
    4/18- BBQ chicken thighs, veg
    4/19- Italian Sunday supper- sausages w/eggplant
    4/20- L/O
    4/21- tuna patties
    4/22- strognauf
    4/23- roast beef w/mash and veg
    4/24- tuna melts (getting the big can of tuna from costco, hence two tuna meals)

    4/27-Italian dinner Sicilian chicken
    4/28-L/O
    4/29- grilled swordfish/tuna steaks, veg
    4/30- fish/shrimp taco night

    Whew. I am having a baby April 3rd, my 4 y/o's bday is April 19th, my oldest is April 30th and I have a bday party the 25th! glad at least I got dinners figured out so I don't have to think too hard!

    made a pot of chili and we are still eating off that and the last few HB eggs
    dtill have 2 kinds of muffin and 1/2 a HM apple pie
    -making a crock pot roast w/ potatoes and carrots 4/3
    -burritos w/ L.O. roast/beans/cheese and fruit 4/4
    -hamburgers/beans 4/5
    -Easter steaks.mash pot. and a veg. Make a dessert (choc cake,/cherry pie filling) 4/5

    I'm doing freezer inventory and meal planning tonight or tmw. I might wait til tmw to see what's on special at the grocery in the flyer.

    I can join in temporarily. I desperately need to work on meal planning for trips. I'll confess I don't have a lot of interest in planning meals at home. But I really, really want to be able to stay on track with Weight Watchers when we travel, and in order to do that I need to come up with at least a dozen good, quick, lower points meals that have ingredients I can buy anywhere, that travel well in a cooler, that can be eaten without utensils and without making a mess in the truck, and that are filling but not fattening. I don't want much, do I? It's been a challenge I haven't been able to meet in all the years we've camped, but I've had some ideas lately that might help me. I own approximately 1,587,824 WW cookbooks and obviously I have the internet too, so you'd think I could figure out how to eat the right foods on a vacation.

    A big deal for me is portion control. For the most part, I don't eat much for bad foods, but good foods become bad foods if I'm overeating them.

    I'm not sure how this challenge actually works but for me, I'll post ideas and progress see what happens, if that's okay. Hopefully before too long I'll have a good base of go-to recipes and menu items that will work with the WW plan.

    One thing I realized in the past couple days is how neatly a wrap can be eaten if it's wrapped up in wax paper, and the paper peeled away as it's eaten. You can believe I'll be making good use of that idea! I already bought myself a roll of wax paper for the camper. There are endless recipes for wraps, so I expect to be able to get some good variety there. I've already found one recipe I like from WW that's only 5 points. It's simple and quick to make, and uses ordinary sandwich ingredients we always take on a trip. Easy!

    I'm also adding a food scale to my camper equipment and bought two WW Points Plus trackers from eBay on Saturday, one for the truck and one for the camper. That removes the excuses that I have to guess how many points are in a food, or at portion sizes, which of course is always wrong. After all, if I was good at guessing about that stuff, I wouldn't have gotten fat in the first place.

    I'll post my menu for Day 1 when I figure it out.

    Hey everybody,
    I have sooooooo been slacking on menu plans to post here. I have been cooking my sons favorite meals since he has been home and sometimes he waits till the day ahead to tell me. Tomorrow night is meatloaf, corn on the cob and fruit. I will firm up menu plans at least weekly and post it here later.

    26 Tue Spaghetti with meatballs
    27 Wed Chicken parmesgan, corn, broccoli
    28 Thu Spicy Black Beans and Rice with anduouille in crockpot
    29 Fri Grilled salmon, sliced cucumbers, roasted zucchini/squash
    30 Sat Asian Lettuce Cups with Spicy Ground Turkey Filling
    31 Sun Ham, waldorf salad, roasted brussel sprouts, sweet potatoes, coconut cake

    Hey all! So the second semester got the better of me and I've totally slacked on FV posts! But I'm back and raring to go!

    My menu plan for this week has been/will be:
    S - Enchiladas
    M - Sloppy Joes*
    T - Grilled brauts and hot dogs
    W - Cashew Chicken*
    T - Leftovers
    F - Pasta Puttanesca with shrimp
    S - Beer Can Chicken on the grill

    For next week I have the following planned:
    S - Eat with friends
    M - Worcestershire Chicken
    T - Beans & Rice
    W - Crock pot pork loin
    T - Spaghetti
    F - Burritos (making extra to freeze)
    S - Homemade pizza

    I have a head start on the last week of the month, but I think it calls for some tweaking before I'm ready to share. If my plan pans out, we won't be eating out for another two weeks! I call that (and all the money saved by not eating out) a huge WIN!

    I am actually keeping better track of our meals because I am obsessed to see how much of what we eat and if I can grow it in the garden for a year's supply. So far I need to do a major expand. Anyhow....
