    Default Canning Food Challenge..

Canning food is a great way to preserve your food for short and long term consumption..

I want to add a lot more canned food to my pantry..

I have canned heat (even cold) and eat foods like taco meat, beef in wine sauce, chili, meatloaf, tomato sauce w/meat,chicken soup w/o noodles, pork cubes,hamburger..bscb that I can make into chicken salad if I want to.

I buy meat in bulk when it's on sale then get busy canning it..I love the Taco meat that I canned..I will eat that any day over freshly made! I'm weird I know..

Unless frost gets my Fruit trees I should be able to at least can some peaches this year..(keeping fingers crossed) I might get enough apples to can some applesauce from my trees..

So my challenge for myself is to can at least 50-jars of food..

    I hope you join me!

I'm in. I usually do pickles and jams but this year I would really like to learn how to use the pressure cooker. I know that I would never get to 500 but it sure is an awesome goal. Good luck Raiquee!

I'd be interested in hearing how you do taco meat. We eat a lot of tacos, and I currently freeze large batches. Canning would free up some space in the freezer.

I can a lot of sauces, soups, and chicken. Pickles and vegetables at the end of summer.

I'm in. I make salsa every year - usually about 80 jars. I have wild blackberries so I make jam from time to time. I have a pressure canner, but have not used it a lot. I did green beans in it a couple years ago, but just froze them this year. I also water bath can peaches, applesauce & pears. They taste so much better than store bought, plus I can do them with little if any sugar.

Another site I follow is really into canning broth & also dry beans.( you rehydrate them first). I would like to try both of those things too.

I don't usually follow recipes, just had cubed beef and lots of veggies leftover from the party. The ingredients were red potatoes, corn, carrots, celery, red wine, beef stock, beef, and home canned tomatoes, oh and some mushrooms I had leftover too.

In 2014 I canned lots of broth and dried beans, so convenient and you know exactly what's in them!

Well I figured we canned right around 150 jars last year, and I wasn't really pushing it. Hardest I canned was after we picked strawberries cause they go south so fast. I also got 9 packages of soup bones in the freezer, with makes about 4 quarts each pack. So I will can at least 36 in beef broth alone. There was so much I didn't can last year just clause we didn't get a lot of it, or cause I ended up preggers in Sept and couldn't look at food/the garden : D

    Did you can strawberries?

I canned some chicken broth but it's not very clear..

Could you all give me some ideas on what you canned and maybe some recipes?
