    Well... the "ground beef" I was going to use for tacos turned out to be turkey sausage, and just as I was trying to decide which meal to rearrange some old friends called and suggested dinner out. Perfect timing!

    Our favorite meat for fried rice is but I think those days are pretty much over now.

    Hot dogs (those days are mostly over here, too) are good sliced or chopped and then browned with some onion and then with scrambled eggs poured into the pan and cooked. Wiener gravy is also good. Brown the chopped or sliced hot dogs in a little oil or grease of some kind and then make gravy as usual. Serve over potatoes or biscuits or toast or whatever you like. I like the gravy made with chopped onions too, which are browned with the hot dogs. Hot dogs can be sliced into most any kind of hotdish and lots of kinds of soups, instead of other meats.

    I will be getting back to more formal meal planning on Monday. Husby is going back to work and I should have some less distractions so I can look through cookbooks and think more clearly. I'll no doubt be making some things for the freezer, too, so we have healthy convenient meals when we're too busy or tired or lazy to actually cook.

    I'm working on purging all the bad food out of the house, some of it by just giving it away, some by incorporating it into dog food, and some by using it in small amounts for ourselves. I still think we were doing better than a lot of people in keeping out convenience foods (except for deli meats, which we knew were bad) and other processed foods but with the new guidelines now, I can see we have a way to go yet. I'm up for the challenge! I've always felt if we weren't eating tasty food that's healthy, we were doing it wrong and I still think that's true. Now that Husby is all in on eating right, things will be easier for both of us. I've been purging stuff for about three years now and no longer have a big stash of candy in the freezer, very little for pizza or other convenience foods, etc, so we're getting rid of a lot less than we would have had to a couple years ago. Good meal planning will help me get rid of the last of it in a more thoughtful and safer way.

    Still on track with the plan I made last week.

    This week we have:

    salmon, cauliflower
    cottage pie. salad
    parmesan chicken, sweet potato fries, broccoli
    chili, spinach quesadillas
    chinese dumplings, spring rolls, salad
    broccoli cheese soup
    bbq brisket

    That still leaves me with tortilla soup, turkey burgers, fish burgers, parm chicken, and tortellini for next week.

    We swapped a few things around and DH is going to get a bag of tilapia filets.

    - tilapia, broccoli
    - spaghetti, meatballs, veg
    - chili dogs, salad
    - broccoli cheddar soup
    - parmesan chicken, veg
    - fish or turkey burger, salad
    - sloppy joes, veg

    Aside from the tilapia and fresh vegs this all comes out of stockpile/pantry.

    Revised menu plan. DH forgot to get tilapia and can't find the chili sauce for the hot dogs. Rollin' with what he did get:

    - tacos, salad
    - spaghetti, meatballs, broc
    - broccoli cheddar soup
    - parmesan chicken, brussels sprouts
    - turkey burger, green beans
    - sloppy joes, salad
    - polenta (aka grits), eggs, green beans

    And we will see what DH brings up from the garage freezer to add into the mix.

    Ok, DH brought stuff up from the freezer and went shopping and we have:

    -- black bean soup, cornbread muffins
    -- asian chicken lettuce cups, +?
    -- meatloaf, broccoli, potatoes
    -- falafel in pita, salad
    -- chicken pot pie
    -- baked fish, coleslaw

    Will possibly eat out this weekend.

    I've fallen off the face of the planet, or at least off FV for the last several months but I have been meal planning and have done well most months. This week's meal plan:
    Monday - Worcestershire chicken with stuffing and a veggie/noodle dish on the side
    Tuesday - spaghetti and Italian sausages
    Tonight - pizza and breadsticks
    Thursday - pancakes and sausage
    Friday - eat out (visiting my MIL)
    Saturday - Leftovers
    Sunday - roasted chicken with veggies
    Focus on getting ahead, one penny at a time! Keep the main thing the main thing!

    I may ask DH to pick up a rotisserie chicken if he goes shopping this week.

    Question - ham is inexpensive right now and I have a grinder attachment (never used/inexperienced) for the KitchenAid mixer. Has anyone ground up ham (such as for sandwich spread) and did you like it/use it up? Would it freeze? Other ideas?

    I have frozen chunks of ham before and the ham bones to use for soup. Just thinking about the grinder and recipes.

    Making pinto beans w/ ham in the crock pot soon. Making space in the freezer. Will check stores for meat markdowns right after Christmas.

    I had ham/spam salad sandwiches as a kid, not a fan of it now. When I get big hams on sale I portion slices out into zip bags and freeze that way. Sometimes I keep the bone, but DH is not a fan of bean/lentil soup.

    Ham bone is a great addition to veg soup recipe (I use the Martha Stewart recipe). Adds a lot of flavor.
