    We have ceremonies for various senior things this week, so at least two of the days will be Kinda fend for yourself days. Other than that, the plan is:

    chicken
    quesadillas
    London broil
    pasta

    I went shopping late today and picked up a couple of small beef rib-eyes marked down for quick sale. Also got 3 bags of salad, so there will be a lot of that this week.

    -- rib eye steak, salad, potatoes
    -- chicken, salad
    -- tuna steak, salad, corn
    -- lemon chicken, rice, salad
    -- BLT sandwiches, ?
    -- ravioli, garlic bread, veg

    I've been meaning to make an apple pie for months. Maybe this week.

    The freezer is dwindling down and DH said there isn't much. DH said he's buying pork butt as it's on sale.... From what we have, here's my guess for dinners this week:

    shepherd's pie
    smoked pork butt
    leftovers
    fish

    I may make bread or corn bread, and maybe cookies this week.

    A little late but this week's plan:

    -- chicken marsala with mushrooms over polenta
    -- leftover bbq soft tacos w/ leftover refried beans, and slaw
    -- (movie night, so probably @ restaurant)
    -- tuna salad nicoise
    -- dumplings w/leftover fried rice, maybe a chicken stir fry
    -- ravioli, green beans
    -- potluck with friends

    Using up a lot of frozen stuff. I've been thawing chicken for enchiladas, chicken & rice and grilled chicken with wing sauce. Also got some steaks going on the grill. Frozen veg and rest of ground beef gone. I'm still wanting to use up the chorizo and may put it in pasta. And do the sausages in stuffed cabbage.

    I got DS1 a half gallon of ice cream about 6 months ago and he hasn't touched it. It's vanilla peach and I'm gonna ask him what his plans are for it.

    DS2 ate all of his cereal and mine. I had to buy his fave since it's $1.79/box on sale.

    I have bacon and tomatoes to use. I'll make turkey sandwiches with it.

    If you have a recipe for chorizo I would like it. It gets marked down frequently here, over-supply. I have 1 recipe made with rice and canned tomato. Pasta sounds like a good alternative......

    Dlr, I would just use it in any recipe that calls for sausage crumbles. Stir some into scrambled eggs or hash browns, cook it with lentils, use it to spice up a vegetable soup, etc. You can mix it with other ground meat like turkey to add flavor or reduce fat.

    This is going to be a chaotic week, what with family visiting. I only know half their plans, and even that I'm not sure about.

    I need to get back into a real meal plan. Some days become so busy that we eat whatever we find or grab something out.

    We are trying to do better. There was a lot in the freezer and we've just been going through that and cleaning it out. Time to do a deep clean. I'm sure there are a few things that could be thrown out.

    we have lots of corn on the cob. Our neighbor gave us a big feed sack full. We ate some, gave some away and still have half a bag. We'll eat some more and we'll give the rest away.

    pork chops
    turkey keilbasa
    bacon (maybe I'll wait for my tomatoes to ripen and have blt's)
    fish/shrimp
    pot roast (was supposed to be for yesterday but bil had a grand idea of a get together, so that will be saved for next Sunday)
    I know there's more in the freezer, I'll figure it all out.

    Dlrcpa- DS2 had to make an authentic Spanish dish for his class and this was made with chorizo. He gave it a 9/10.

    Chorizo and Potato Spanish Tortilla Bites

    1 bunch scallions, finely chopped (white part and green part in separate bowls)
    2 TB oil
    2 medium onions, chopped
    4 garlic cloves, chopped
    1 1/4 tsp salt
    1/2 tsp pepper
    6 oz chorizo, cut into 1/4 inch dice
    1 1/2 lb Yukon gold potatoes, peeled and cut into 1/4 inch dice
    9 large eggs
    3/4 cup sour cream
    5 oz manchego or white cheddar cheese

    Put oven rack in middle of oven and preheat to 400 degrees. Oil a 13x 9 " pan. Heat oil in a pan and cook the onion, garlic, white part of scallions, salt and pepper. Until lightly brown, about 6 minutes. Add chorizo and cook, about 4 minutes. Reduce heat to moderate and add potatoes. Stir and cover the pot. Cook until potatoes are tender, about 10 min. Transfer to a large bowl.
    Whisk eggs, sour cream, cheese, and scallion greens into a bowl and then transfer to the baking pan. Sprinkle potato mixture over eggs. Bake until set, about 20 min. Cool to room temp. Cut into 2 inch rectangles.

    Aahh, yes. Meal planning. I have an idea most of the time. This week, though, I'm thawing out chicken and chorizo. Here are my plans for those:

    Spanish Tortilla with chorizo
    Breaded chicken with yellow rice and spinach
    chicken soup with carrots and egg noodles
    Pasta with baked chicken pieces in a tomato sauce and homemade bread

    I'll try to make applesauce muffins and hope they turn out ok. Family loves chocolate chip cookies and I'll need to make those too.

    RJ thank you for the recipe, looks good. I just bought a LARGE sack of regular potatoes and chicken at the store.
    Sun - large chicken on BBQ rotisserie
    Mon - leftovers
    Tues - potato soup in crock pot
    Wed - maybe pizza if cool enough to turn the oven on. Have leftover sausage, pepper, etc.
    Thurs - BBQ chicken thighs in crock pot
    Friday - maybe salads, bake a cake
    Brother was disappointed all I brought on Satuday was HB eggs and baby carrots. Dad was fine with that and Ritz crackers and sliced tomato for lunch. So I need to generate more leftovers this week for next Saturday.
