I was on vacay part of this week and was able to make chicken pot pie today. It's been cold & rainy and I'm freezing!! So, comfort food is calling me....The rest of the week looks like this:
- chicken soup
- chicken fricassee (new recipe for me)
-BLT's
- pot stickers (shrimp & scallop or pork)
- beef tacos
I made the chicken-tortilla wraps/pinwheels last night. They were good but I realize that within 24 hours the tortilla is getting soggy. I want to make these for the dog club open house but I think I would have to make them the day-of, not day before. Good to know beforehand for planning.
Wednesday grouper burgers, rice, veg.
Thursday Ratatouille & pasta.
Will pick depending on the weather, hot or cold.

Lot of question marks this week, depending on how hungry DH is or how tired I am.
We had leftovers Monday and Tuesday. Those are all gone now. Wednesday I'll make gumbo. Surprised to discover no more garden okra in the freezer, guess I will have to buy it. I'll get ricotta also. I still want to try some sort of pumpkin lasagne. I KNOW there is pumpkin in the freezer.

Dog club open house on Monday night, I expect a lot of leftovers: I made deviled eggs, sliced chicken tortilla wraps, cake, cookies.
I kept enough ground beef unfrozen for burgers one night. I would like to make a pot of potato/onion soup. I noticed hubby bought thick bacon, which would be a nice garnish. I need to use up buttermilk, so maybe buttermilk biscuits one night (used some in the cake recipe.)

Contrary- We have been shopping the pantry too. I thawed out and cooked chicken breasts for meals this week and am making cranberry pumpkin bread now. I made chocolate chip cookies the other day from chips that were in the fridge over 3 years...Still taste good IMO.
I have a ham bone that I put it in the slow cooker with water to make a stock. Then I'll cool and drain the fat. Then use the stock, ham pieces, leftover pasta, onion, carrots & potatoes to make a soup. I have a few potatoes, lots of tiny carrots, an onion... I've never done it before and it popped into my head. So, I hope it turns out!
Ru, the soup sounds good, almost like minestrone. What I'd call "kitchen soup", using up whatever I could find in the fridge or pantry. Put a big bay leaf into it, if you have any. Leftover canned tomato or sauce would work, as well. Any kind of greens or green vegs.
