Stopped at Sam's club today as DH wanted to look at the pork butts since they were on sale. Here's the tentative plan:
Today- smoked beef ribs, steamed cauliflower and cornbread
Tomorrow- smoked pork butt, l/o cornbread, spinach
The rest of the week -beef/onion/potato empanadas
-chicken pot pie, crackers
-chicken tortilla soup, extra tortillas
-chicken melt sandwiches, fries
-Nonna's cod with tomatoes, rice

I haven't cooked for days leftovers and takeout. but house is stocked so just figure out stuff from what we have. Has gotten cooler so can use the oven. local store has bogo half hams so will get some. family loves them. whatever veggies frozen or fresh to go with them. need to use up some stuff in the freezer. some ideas.
ham and frozen mac n cheese
frozen fish and fries
perogies with bacon and onions.
frozen fresh pasta and frozen homemade sauce.

I made shepherds pie and rolls tonight. We’ve got enough left for tomorrow night too. I plan on making breakfast burritos later this week. Dh requested ribs at some point so maybe Friday?

Figured out the week without needing to buy anything:
-- beef barley soup
-- baked fish, beet salad
-- chicken, green beans, baked potato
-- chinese dumplings, edamame, soup(?)
-- meat pies, hummus, tomato salad
-- chicken, rice, brussels sprouts
-- leftovers
-- kibbe, spiced potatoes, tomato salad

The winter weather is blowing in and I have to figure out a menu. I will make the following this week:
- beef veg soup
- chicken stir fry wraps
- stuffed cabbage
- chicken enchiladas
- breaded chicken & onion rings
I'll make an apple pie, possibly cookies. If I find marked down italian/french loaves, I'll crisp them up for the stuffed cabbage.

Hubby making bacon-mushroom risotto tonight. I bought a sack of potatoes so bacon-potato soup later this week. Also bought a frozen pizza to try and bag salad.

With a ham thawing, we'll be able to make several meals. Here's a tentative plan:

Sigh. I wish ham would go on sale here. Maybe soon/Thanksgiving? Thankful that eggs and chicken and ground beef still holding steady on sales. They did not have apples on sale like they usually would at this time. Maybe I should check out the new store that opened over the summer, have not been there yet - Sprouts.

This week, not necessarily in this order, subject to change:

-- chili and/or pigs in blankets
I have only seen small packages of ham on sale, pre-sliced stuff. But it is too much salt and fat for DH to have regularly so we don't get large ones any more.
Sprouts can be wonderful, sometimes. IMO it's like Whole Foods was 25 years ago, fresh organic and lots of specialty vegetarian, gluten-free, non-gmo, etc without being expensive. But some stuff just IS expensive. I used to love the bulk goods, but it's all pre-packed now due to covid. The produce prices are always good. Don't care for their breads. The ham was from last holiday season and I haven't seen ham on sale either, come to think of it. I may make breakfast burritos with it for dinner if dh brings home potatoes. A casserole will need more ingredients, which i do not have right now.
