    I'm in this month. DH has no jobs lined up and we've got 2 big expenses with DS's wedding and DD's cheer off in Orlando. Today I'm making up a Pasta Fagioli Soup with items a)in the deep freezer I cleaned out on a job b) items from the pantry on the same job
    c)leftovers from a veggie tray at a luau we had 2 weeks ago.

    I'm cooking up 1 1/2 lbs of ground beef (freezer) with a few cans of tomatoes (pantry) and some onion and garlic (fridge) into some pasta sauce. I'll have 4 dinners "made" in one afternoon. Now if I just had some fresh bread for garlic toast! I guess store bought bread will have to do...not as yummy though.

    I'm gonna flop tonight. We're having some kids haul furniture for us, so we're springing for pizza as a thank-you.

    However, I found my pantry/freezer inventory from mid-October and will be using that to plan meals for this month. Time to use up some of the weird stuff in my cupboards.

    Count me in! We've gotten stocked up as of today! & we are sitting pretty! Altho... we may need to get more hamb. meat, but I think I just may be able to stretch it! we have plenty of those weird things in the cabinet that need to be used up!

    Today having some friends and their kids over for dinner and play time! I am making cookies, and tacos and rice for us to eat. Using up the taco meat I had frozen from last month, and the leftover rice that I need to cook up!

    Tonight is pork chops, spiced parsnips, a vegetable. Plus I'm going to make coleslaw.

    Made a Low Fat Pumpkin Pudding for dessert using some pureed pumpkin I made last year and froze. Made my own pumpkin pie spice rather than buy some. That will be dessert tonight. Need to find a pork chop recipe next.

    This is a good challenge. It's getting me thinking.

    I cleaned out the pantry today. It is looking pretty bare. I have enough for this month then not much after that. I found some more cornbread mix ( forgot we had thought used up last yesterday and we are loving cornbread lately!) and am making some mini corn bread muffins. I have can of cream of mushroom soup that I will serve tonight with a chicken breasts ( pounded thin) and mashed potatoes and corn. Kids love this dish!

    Doing great here. Have been making all meals from pantry and freezer. Waffles for breakfast have been a nice treat for everyone. ANd the pot of soup has been good for lunches. Supper have all come the freezer. Lots of cleaned out tupperwares finding there way back to the cabinet.

    Well the pumpkin pudding was a bomb. The pork chops turned out great, as did the spiced parsnips.

    Last night was tacos. I did go to the store to pick up $15 worth of produce though...and milk.

    Tonight was salmon fillets with brown rice, peas (rescued from the freezer) and carrots.

    This isn't going too badly. I used some lime juice that's been in the fridge a long time, on the salmon fillets. Found the frozen ginger in the nether reaches of my fridge and have used it twice in two days. I just seem to be more aware of what's in the house right now. Will keep this up and see how I do with groceries by the end of the month.

    We ended up having spaghetti tonight instead of the other night. I'm putting a roast in the crock in the morning.

    It will probably be crustless spinach quiche with garlic toast tonight. Maybe a ceasar salad thrown in for some balance.

    Last week of my spending only $100 on groceries this month. I bought milk, eggs, bread, veggies, fruit, and couple things to get by.

    So pantry and freezer/fridge are looking bare..but not empty. I am trying right now to think of 6 meals. M,T,W,T,F,S.

    I have couple boxes of noodles. Half jar spag sauce, mac and cheese, rice, a few canned soups, canned veggies, Pork roast, pork chops, turkey breast, ground turkey, and salmon. I should be able to make dinners from that.

    Breakfast I have pancake mix, french toast sticks, pop tarts, one box cereal, half loaf of bread, oatmeal, sausage, and some raisins, apples, and mixed fruit.

    I should have taken before and after pic of my pantry!
