    Take-Along Breakfast Bars ~

    3/4 cup regular or quick-cooking oats

    3/4 cup all-purpose flour

    1/4 cup whole wheat flour

    2 tsp. baking powder

    1/3 cup brown sugar

    1/2 cup peanut butter

    1/4 cup vegetable oil

    1 cup milk

    1/2 tsp. vanilla extract

    2 large eggs

    vegetable cooking spray

    1/2 cup of your child's favorite jam


    Preheat the oven to 350. Lightly coat an 8x8 baking pan with vegetable spray. In a medium mixing bowl, combine the oats, flours, baking powder, and brown sugar. Set aside the dry ingredients. In a large bowl, whisk the peanut butter, oil, milk, vanilla extract, and eggs until well blended. Add the dry ingredients and mix until the batter is moist. Spread the batter into the prepared pan. Then drop the jam, tablespoon by tablespoon, into the batter in the pan. With a knife, swirl the jam through the batter. Bake 35 to 40 minutes, then cool on a wire rack. Cut into 2-inch squares. (Makes about 16 squares.)


    Bagel Faces ~

    1 medium-long thin carrot, sliced into thin rounds

    tiny cherry tomatoes, whole or sliced in half

    black olives, sliced

    1 small bell pepper, thinly sliced

    alfalfa sprouts

    1 very small cucumber, sliced into thin rounds

    2 bagels*, cut in half

    1 small container whipped low-fat cream cheese

    Arrange the vegetables in small bowls on a table. Spread the cream cheese on the bagel* halves. Decorate bagels with the vegetables, using carrot rounds for eyes, cherry tomatoes for a nose and cheeks, alfalfa sprouts for hair, etc. (Makes four servings.)

    Marshmallow Breakfast Bars ~

    3 tbsp. low-fat margarine

    6 cups marshmallows

    5 cups nutritious cereal

    In a microwavable bowl, melt margarine on high heat for 10 to 15 seconds. Stir in marshmallows and microwave for 1 1/2 minutes, stirring halfway through. Stir in cereal. Press into greased 13x9 pan. Let cool then cut into bars.


    Burrito

    3 large eggs, scrambled

    1/4 cup shredded cheddar or Monterey Jack cheese

    2 flour tortillas

    1/4 cup sour cream

    1/4 cup salsa

    1/4 cup sliced avocado

    Roll the eggs and cheese in tortilla. Heat if desired. Garnish with sour cream, salsa, and avocado.

    Fruit Shake-Ups ~

    1/2 cup lowfat fruit yogurt

    1/2 cup cold fruit juice

    Put fruit yogurt and cold fruit juice in a non-breakable, covered container. Make sure the lid is tight. Then shake it up, and pour into a cup.


    Yogurt Sundaes ~

    1 cup plain yogurt

    Sweeteners:
    raw sugar

    colored sugar

    honey

    maple syrup

    brown sugar

    applesauce

    Crunchies:

    wheat germ

    chopped nuts

    cereal

    Extras:
    dried fruit (such as raisins, currants, cherries, blueberries, chopped apricots or mangoes)

    chopped coconut

    miniature chocolate chips

    fresh fruit (such as chopped strawberries, blueberries or raspberries)

    Sweeten a dollop of yogurt with one ingredients from the sweetener category. Then add any number of ingredients from each of the crunchies and extras categories to suit your mood. (makes one 1 cup serving)
