Needing a Baked Potato Skins Recipe
When I make mashed potatoes, I usually save the potato skins for the next day to fry . However, the doctor says that DH shouldn't be eating fried foods anymore and I was wondering if anyone had an alternative recipe that I could try- that I could bake the potato skins somehow , perhaps with seasoning? Thanks

Most recipes call for brushing liberally with oil and baking at high heat. Be careful you don't use too much oil, or add too much cheese and bacon, or you're right back in fat bomb/heart attack city.

I don't peel potatoes for mashing. There's really no need to.
Here's a recipe from Weight Watchers. I haven't tried it.
Potato Peel Crisps with Rosemary-Lemon Salt (4 servings)
6 oz potato skin(s), from russet potatoes
4 tsp olive oil
1⁄2 tsp kosher salt, divided
1 tsp rosemary, finely chopped
1⁄2 tsp lemon zest, finely grated
Preheat oven to 400°F. Line two large baking sheets with parchment paper.
Toss potato peels with oil in a large bowl; arrange in a single layer, skin side up, on prepared pans. Sprinkle with 1/4 tsp salt; transfer to oven and bake 12 minutes.
Meanwhile, combine remaining 1/4 tsp salt, rosemary and lemon zest in a small dish; rub ingredients together between your fingers until aromatic.
Using two forks, turn potato peels so they are skin side down; rotate pans in oven and bake 2 minutes more. Remove potato crisps to a serving dish; sprinkle salt mixture over top and using two forks, toss well. Serve immediately.
Serving size: 3/4 c
You can omit the rosemary and lemon zest if you want and just use your own seasonings.
If you have an air fryer, these would probably cook very well in that. Watch them closely till you figure out the right time/temp for the AF version.
If you bake them on a wire rack on a pan, you may not have to mess with turning them.

I'm lazy so I don't brush this kind of thing with oil. I throw the oil and the potatoes in a bowl and mix them up. At least that's the method I use for making baked or air fryer french fries. Skins might break up more.
Some recipes also suggest spraying with cooking spray.
Nothing wrong with brushing, just offering some other ideas.
