    Default failed recipe help

    One of my boys refuses to eat rice. He does eat rice at this one local Mexican restaurant. It has some sort of "sauce" in it (looks like tomato possibly). I tried cooking the rice with tomato sauce and it was a failure. Let's just say that it is very unattractive. I can't make a soup out of it because my husband refuses to eat soup with rice in it.

    Any ideas on how to use it? I hate to throw it out.

    How about browning some hamburger, adding an onion to it, let it brown, throw in the rice, some ranch style beans and cook until warm. At our house I'd throw in some diced chili peppers and simmer. Just before serving it I'd add some grated cheese and call it "mexican surprise".

    Spanish Rice

    1 small onion, chopped
    1/4 c chopped green pepper
    3 T butter
    2 c canned tomatoes
    2 tsp sugar
    3 c cooked rice
    salt and pepper to taste

    Saute onion and green pepper for 5 minutes in butter. Add tomatoes, rice, sugar, salt and pepper. Bring to a boil and simmer gently for 5 additional minutes. Serve hot.

    We enjoy this rice. I hope your family will also.

    Zakity,

    for your future spanish rice I can give you the following suggestions:

    *Use long grain rice, preferrably Basmanti
    *Saute rice in oil (I use olive) until golden brown, before adding water or broth (can use vegi or chicken broth), then add any other items and cover, lower heat, and cook for 20 minutes.
    *If you are adding any tomatoes or sauce remember to minus that amount of water.

    Hope some of these will help you.....I make a form of this rice at least once a week and hubby really likes it.....sometimes I will add a can of pinto or kidney beans and we will just have that for a meal.
