Fudge Mix


3 1/2 cups confectioners sugar
3 tbsp. non-dairy powdered creamer
1/2 cup cocoa
1/4 tsp. salt
1/2 cup butter or margarine, cut into pieces


In a large bowl, combine the first 4 ingredients. Cut in the butter with a pastry blender until the mixture is blended well. Store in an airtight container in the refrigerator. Give as a gift with the serving instructions below.


To serve: Line an 8-inch square baking pan with aluminum foil, extending foil over 2 sides of the pan. Grease the foil. Combine the fudge mix with 1/4 cup water in a large microwave safe bowl. Microwave on HIGH, stirring every 30 seconds, until the mixture is smooth (approx. 3 minutes). Pour into the prepared pan. Chill for 1 hour or until firm. Use the overlapping ends of foil to lift fudge from the pan. Cut into 1-inch pieces and store in an airtight container.
