Wheat Pancake Mix
Wheat Pancake Mix
3 3/4 cups all-purpose flour
3 cups whole wheat flour
1 3/4 cups plus 2 T. buttermilk powder
3/4 cup sugar
1 T. baking soda
1 T. salt
Combine all ingredients and mix well. Divide mix evenly into 5 resealable plastic baggies (about 2 cups in each bag). Store in the refrigerator. Give with serving instructions.
To serve: Grease and preheat griddle. Combine 1 bag of pancake mix with 1 cup of water, 1 egg, and 2 tablespoons of vegetable oil. Stir just until moistened. Let stand 5 minutes. For each pancake, pour about 1/4 cup batter onto griddle. Cook until top of pancake has a few bubbles and bottom is golden brown. Turn with a spatula and cook until the remaining side is golden brown. Serve warm with syrup. Makes about 9 pancakes.
Makes about 10 cups of mix (5 batches of pancakes).
