Minted Cocoa Mix

2 hard peppermint candies
1/2 cup non-dairy creamer
1/2 cup confectioners sugar
1/4 cup instant coffee granules
2 T. unsweetened cocoa

In a food processor or blender, finely crush the peppermint candies. Add the remaining ingredients and mix well. Store in an airtight container.

To serve: Spoon 2 tablespoons of mix into a mug and add 3/4 cup boiling water; stir to mix well.
