Molasses Cookie Mix
Molasses Cookie Mix
6 cups all-purpose flour
3 cups sugar
1 T. baking soda
1 T. baking powder
1 T. ground ginger
1 T. ground cinnamon
1 1/2 tsp. ground nutmeg
3/4 tsp. ground cloves
1/2 tsp. ground allspice
Combine all ingredients and mix well. Store in an airtight container in a cool dry place for up to 6 months. Give as a gift with serving instructions.
To serve: In a mixing bowl, cream 3/4 cup of butter or margarine. Add one egg and 1/4 cup molasses; mix well. Add 3 cups of the cookie mix; beat until smooth. Shape into 1-inch balls and roll in sugar. Place 2-inches apart on ungreased baking sheets. Bake at 375 degrees for 9 to 11 minutes or until the edges are firm and the surface cracks. Cool on wire racks. Makes 4 dozen cookies.
Makes 9 cups of mix (enough for 3 batches of cookies).
