Sugar Free Cookie Mixes.....
You can use these in a jar recipe by mixing together dry ingredients and giving a card with wet ingredients and recipes..

Sugar Free Raisin Cookies
Yield: 1 servings
2 c Raisins
2 c Flour
1 ts Cinnamon
1 ts Soda
1 c Unsweetened applesauce
2 Eggs
10 pk Sweet and Low
3/4 c Cooking oil
1/2 ts Salt
Cook raisins in water until almost dry. Add rest of the ingredients. Drop by spoonfuls on cookie sheet and bake 20 minutes at 350 degrees. For cake, bake in long pan, greased and floured. Bake at 350 degrees for 45 minutes.

Sugar Free Pudding Cookies
Sugar Free Pudding Cookies
Yield: 1 servings 1 pack
Sugar free instant pudding (any flavor)
1 c Bisquick
1/4 c Oil
1 Egg
Mix dry ingredients together, then add wet. Shape into balls and place on un-greased cookie sheet. Push your thumb into each cookie to flatten a little. (Bake at 350 for about 5-8 min.

Sugar Free Fudge Recipe
16 oz Cream cheese, softened
2 ea unsweetened chocolate -squares (1oz each) melted and cooled
1/2 c sugar substitute (aspartame sweetener)
1 t Vanilla extract
1/2 c Chopped pecans
In a small mixing bowl, beat the cream cheese, chocolate, sweetener and vanilla until smooth. Stir in pecans. Pour into 8-inch square baking pan lined with foil. Cover and refrigerate overnight. Cut into 16 squares. Serve chilled.
Diabetic Exchanges: one serving ó fat; also 147 calories, 84 mg sodium, 31 mg cholesterol, 5gm carbohydrate, 3gm protein, 14gm fat.

SUGAR FREE CHOCOLATE BANANA MOUSSE
This would not go well in a jar, but would make a yummy Holiday treat !!

(Yield: 8 servings)
Ingredients:
------------
1-oz. sq. (28-g sq.) unsweetened chocolate
1 cup (250 mL) evaporated skim milk
3 tblsp (45 mL) granulated sugar replacement
2 egg yolks
1/4 tsp (1 mL) salt
1 tsp (5 mL) vanilla extract
2 bananas (sliced)
Instructions:

Combine chocolate, 1/4 cup ( 60 mL) of the milk and the sugar
replacement in top of double boiler. (Chill remaining milk in
freezer.) Cook and stir over simmering water until chocolate melts.
Pour amount of hot chocolate mixture over egg yolks and beat well.
Pour egg mixture into chocolate mixture on top of double boiler. Stir
in salt. Cook and stir over hot water until mixture thickens. Cool
completely. Scrape cold or slightly frozen milk into mixing bowl and
beat until very stiff. Fold chocolate mixture into stiffly beaten
milk. Fold in vanilla and banana slices. Spoon into mold, freezer
tray or individual cups and freeze until firm.
Exchange 1 serving: 1 bread, 1 fat

Sugar Free CINNAMON COOKIES
CINNAMON COOKIES

(Yield: 20 cookies)
Ingredients:
------------
2 eggs
2 tblsp (30 mL) water
5 tsp (25 mL) granulated sugar replacement
1 tsp (5 mL) cinnamon
1 1/2 cup (375 mL) flour
1/2 tsp (2 mL) baking soda
1/4 tsp (1 mL) salt
Instructions:
-------------
Beat eggs and water until light and fluffy. Beat in sugar replacement
and cinnamon. Combine flour, baking soda and salt in sifter; sift
half of the dry ingredients over egg mixture. Fold to completely
blend. Repeat with remaining dry ingredients. Drop by teaspoonfuls
onto greased cookie sheets, 2 to 3 inches (1 cm) apart. Bake at 375
degrees F (190 C) for 10 to 12 minutes.
Exchange 1 cookie: 1/2 bread
Calories 1 cookie: 41

SUGAR FREE COOKIE BRITTLE
COOKIE BRITTLE These have a bit of sugar in the semi sweet choc chip.....Diabetic choc can be substituted..

Ingredients:

1/2 cup (125 mL) margarine
2 tsp (10 mL) vanilla
1 tsp (5 mL) salt
3 tblsp (45 mL) granulated sugar replacement
2 cups (500 mL) flour (sifted)
1 cup (250 mL) semisweet chocolate chips
1/2 cup (125 mL) walnuts (chopped fine)
Instructions:

Combine margarine, vanilla, salt and sugar replacement in mixing bowl
or food processor; beat until smooth. Stir in flour, chocolate chips
and walnuts. Press into ungreased 15 x 10-in. (39 x 25-cm) pan. Bake
at 375 degrees F (190 C) for 25 minutes. Remove from oven, score into
2 x 1-in. (5 x 2.5-cm) pieces and cool completely. Break into candy
pieces.
Exchange 1 piece: 1/2 fat
1/3 bread
Calories 1 piece: 48

Fudgy Brownies (Diabetic)
6 tablespoons margarine
4 ounces unsweetened chocolate
1/3 cup skim milk
1/3 cup apricot preserves with NutraSweet® brand sweetener or apricot spreadable fruit
1 egg yolk
1 teaspoon vanilla
1/2 cup all-purpose flour
10-3/4 teaspoons Equal® for Recipes or 36 packets Equal® sweetener or 1-1/2 cups Equal® Spoonful
1/2 teaspoon baking powder
1/8 teaspoon salt
3 egg whites
1/8 teaspoon cream of tartar
1/3 cup coarsely chopped walnuts (optional)
Heat margarine, chocolate, milk and apricot preserves in small saucepan, whisking frequently, until chocolate is almost melted. Remove from heat; whisk until chocolate is melted. Whisk in egg yolk and vanilla; mix in combined flour, Equal®, baking powder, and salt until smooth.
Beat egg whites and cream of tartar to stiff peaks in large bowl. Fold chocolate mixture into egg whites. Pour batter into greased 8-inch square baking pan. Fold in walnuts, if desired.
Bake in preheated 350*F (175*C) oven until brownies are firm to touch and toothpick comes out clean, 18 to 20 minutes (do not overbake). Cool on wire rack. Serve warm or at room temperature.
Makes 16 servings.
Nutritional information per serving: 99 cal., 2 g pro., 9 g carbo., 7 g fat, 13 mg chol., 80 mg sodium.
Food Exchanges: 1/2 bread, 1 fat.

I printed the whole page!My dad is going to be so happy to get these. He has a hard time because when everyone gets together he can't eat the goodies we do. Now I can bring him some goodies.
And I will be making Jars for Christmas with these recipes too.

Thanks for the recipes. My uncle just found out he is diabetic and really loves sweets so I will be using these to put in his xmas basket.

my step-dad is diabetic too, and i always feel so bad that he can't eat the goodies we have too!
these will really help! they sound so good!!! and easy too!!
most sugar free recipes always need lots of weird ingredients.
