Cinnamon Pancake Mix in a Jar
3 cups All-Purpose Flour
4 teaspoons Ground Cinnamon
2-1/4 tablespoon White Sugar
2 tablespoons Baking Powder
1-1/4 teaspoons Salt
Combine all above and place in a quart jar.
Make tag with the following recipe:
In medium bowl, combine 3/4 milk, 1 egg and 2 tablespoons vegetable oil. Wisk in 1-1/3 cups pancake mix until moistened but still a bit lumpy. Pour approximately 1/4 cup of batter onto a lightly oiled heated griddle or frying pan. Brown on both sides and serve hot.
These are great pancakes. I make them ahead and freeze them for quick breakfasts.
A jar of this mix along with a jar of cocoa mix (recipe posted) makes a wonderful breakfast basket gift. Include a few mugs, some wooden spoons to mix the pancakes, and pancake syrup.

Great idea!! At the grocery store they sell pancake mix in a pretty cloth drawstring bag & it is expensive ! This would make a nice basket gift w/ maple syrup & the other goodies that you mentioned!
Thanks for the ideas!!! I collected up a few baskets at yard slaes this year for very cheap!

Be prepared to give out the recipe when they try these pancakes. LOL, I haven't bought pancake mix in a store in years. The hot cocoa recipe I posted is wonderful as well. Add a jar of that to the gift basket too.

I made these this morning. They were very good.
I will increase the milk and instead of all cinnamon I will use apple or pumpkin pie spice in mine along with the cinnamon

thanks for the recepie, I think Ill go half w.w. half white flour. And use splenda instead of regular sugar. Then I would give be able to give it to my diabetic friend.

Wow, I love this idea too. Now I can share with family and friends who are diabetic. Thanks so much!
I have a friend who will only use this recipe for her pancakes since she swears it's the only mix that doesn't give her heartburn. I guess the commercial mixes maybe have alot of fiber in them?
