Oatmeal Raisin Spice Cookie Mix
Oatmeal Raisin Spice Cookie Mix
3/4 cup packed light brown sugar
1/2 cup sugar
3/4 cup raisins
2 cups rolled oats
1 cup all-purpose flour
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1 tsp. baking soda
1/2 tsp. salt
Mix together the flour, ground cinnamon, nutmeg, baking soda, and salt. Layer the ingredients into a one-qt. wide-mouth jar in the order listed. Pack down each layer so all the contents will fit in the jar.
To prepare: Empty the jar of cookie mix into a large mixing bowl and thoroughly blend the mix. Add 3/4 cup of room temperature butter or margarine (do NOT use diet margarine). Add one egg and 1 tsp. of vanilla. Mix until thoroughly combined. Shape the mix into balls the size of walnuts and place on foil-lined baking sheets about 2-inches apart. Bake at 350 degrees for 11 to 13 minutes or until the edges are lightly browned. Cool for 5 minutes before transferring to paper towels to finish cooling.
