saw the BBQ Pork Chops above---here is my recipe for BBQ Pulled Pork---yummy!!

"Eastern North Carolina" Pork BBQ

1/2 tsp black pepper
2 tsp table salt
1/2 Tbsp hot pepper sauce
3 pound center loin pork, lean only
1 medium onion(s)
1 1/2 Tbsp ketchup
1 Tbsp unpacked brown sugar
1 cup apple cider vinegar
1/2 small tsp crushed red pepper flakes

Place pork roast and onion in a slow cooker and cook for 6 to 8 hours on medium setting until meat is done and shreds easily. Remove from slow cooker to cool. Strain juices from pork and de-grease. Reserve to add later. Combine remaining ingredients in a nonreactive mixing bowl and whisk until salt and brown sugar dissolve. Taste for seasoning, adding hot pepper flakes as necessary. Transfer the sauce to a clean jar and store in the refrigerator. Keeps for several months. Shred the pork, (discarding any visible fat) and return pork into the slow cooker. Add some of the reserved liquids to moisten the meat. Add Vinegar sauce to season as desired (the more sauce, the spicier the BBQ will be.) You can always add more vinegar sauce at the table. Cook on low setting for 3 to 5 hours to mix flavors. Serve as main meat or on rolls with coleslaw as a sandwich.
