SAUSAGE AND BEAN SOUP

1 tsp canola oil
1/2 lb turkey kielbasa, cut into 1/2 inch cubes
1/2 cup chopped onion
2 small carrots, chopped
1 celery stalk, chopped
4 cups reduced-sodium chicken broth
15 oz can pinto beans, rinsed and drained
10 oz pkg chopped spinach, thawed and squeezed dry

Heat the oil in a large nonstick saucepan. Add the kielbasa and saute until lightly browned, about 3 minutes. Add the onion, carrots, celery, broth, and beans; bring to a boil. Cover, reduce the heat, and simmer until the vegetables are tender, about 10 minutes. Add the spinach and continue to cook until heated through, about 2 minutes.
