Capellini with Tomato Sauce

2 large tomatoes, chopped
1/3 onion, chopped
2 2/3 tablespoons fresh basil, chopped
2 teaspoons replacing red wine vinegar
2 teaspoons olive oil
1 clove garlic, crushed
1/3 teaspoon sugar
3 ounces capellini
4 teaspoons grated Parmesan cheese

1. In a large bowl, combine the tomatoes, onion, basil, wine (or vinegar), oil, garlic, and sugar. Let stand, covered, at least 4 hours.

2. Meanwhile, cook the capellini according to package directions; drain and place in a large serving bowl. Top with the sauce; toss to combine. Serve, sprinkled with the cheese.
